Pranzo Semplice No. 1
We love simple lunches and are always on the hunt for something that can be prepared in a few minutes, tastes delicious, and won’t put you into a food coma (abbiòcco, as the Italians say).
First on the list: sundried tomato pasta. This is one of those year-round dishes that is not only foolproof, but super quick too. Tons of flavor in almost no time!
Ingredients:
-i Contadini Sun Dried Tomatoes (long variety in this case)
-Polvanera Olio Extra Vergine di Oliva
-La Pasta di Aldo 'Sfoglina' Tagliatelle with lemon
-A few cloves of garlic
-Parmesan
Method:
- In a sauté pan give the garlic a gentle toasting in olive oil and discard the cloves. Be careful not to burn the garlic.
- Add the tomatoes to the pan and warm them up. Don't go too crazy with the heat as to maintain the chewy texture of the tomatoes.
- Cook the pasta to al dente in seasoned water (about 4 minutes)
- Strain the pasta, saving a touch of water and toss together with the tomatoes in the sautee pan.
- Plate the pasta with a healthy drizzle of olio and finish with parmesan.
- Remember: this is a pranzo semplice! Avoid the temptation to add another ingredient! (OK…maybe one)
